Description
The culture of food in North America is changing—and fast. More than eight million North Americans choose to exclude meat from their diets, and an additional twenty-five million rarely eat meat. Many of these individuals consume no animal products whatsoever. Why do these vegans and vegetarians choose to forgo steak, yogurt, or ice cream? Most commonly, they cite increasing and maintaining personal health. Add to this the steadily growing population of health and fitness enthusiasts who adopt plant-based diets temporarily to meet their performance goals, plus those looking to vegan diets for weight loss, and we’ve got a full-blown diet and lifestyle movement quickly expanding across the globe.
Vegan Vitality is a comprehensive active-living guide and cookbook for current and aspiring vegans and vegetarians interested in making regular physical activity a part of their lives. Karina Inkster motivates and inspires readers to increase the quality (and length!) of their lives by enjoying a whole foods, plant-based diet and engaging in regular exercise. With healthy living advice for everyone from beginners to amateur athletes, as well as a well-rounded collection of one hundred mouthwatering recipes specifically created to fuel active living, this book sets itself apart from existing titles by bridging the gap between diet and fitness, approaching health holistically and as a long-term lifestyle. Also included are interviews with vegan athletes and fitness professionals, each providing their own recipes, top-secret tips, and habits for healthy, active plant-based living.

Karina’s health guide is a fantastic resource for beginners and pros alike! Well researched, there’s plenty (but not an overwhelming amount) of information to help build a healthy (and happy) lifestyle, whatever that looks like. Unlike other diet/fitness books, this one is completely accessible, and easy to use, with straight-forward tips that pack a big impact. A great read if you want to reward yourself with a healthy body and mind.

So far my favourite recipe is the Slow Cooker Chai Concentrate. I love making the large batch of chai concentrate, it’s perfect for when I am on the go. I simply re-heat or drink it cold and diluting it with any milk of choice. The book presents easy recipes with common ingredients and simple cooking instructions. Some recipes I can make enough to freeze so I can have meals ready on busy days. I really find this book helpful because it incorporates the importance of exercising and demonstrating how to ensure my body is getting enough fuel from every plant-based meal. Even if you are vegan or non-vegan, this book has great tips on how to get your nutrition in different plant foods.

I’m not the type to spend hours cooking, or to pore over cookbooks. I have an incredibly busy life as a student, and it’s hard enough squeezing in exercise. But when I saw Karina’s brilliant ideas, I found it was actually saving me time to use her recipes, and finally it’s allowing me to eat healthier without compromising study time! There are plenty of fast, easy recipes and I’m happy to be fueling my brain and body with nutritious and mmmmMMm tasty food!
(And you can be sure I loved it, because I’m even taking the time to write this review!)

I love this author’s blog and her e-book on strength training that has easy to understand pictures and words, so I bought this to fill in the gaps in my vegan education concerning eating vegan and building muscles. It is worth it for a lot of the chapters but I don’t want to bother messing with her yummy-looking recipes to get rid of the oil. She is on the “healthy oils” side of vegan cooking and it seems to work for her.

Love this book and tried the recipes in it.

“Vegan Vitality” combines advice on healthy living with many easy, delicious recipes, and includes the story of how Karina became vegan. Vegans and non-vegans alike will benefit from the well-researched information. The beautiful photos are amazing and make me want to try each and every one of the dishes. There are also useful tips on healthy eating while travelling, and interesting interviews with vegan athletes. A great addition to your home library!
